Few desserts hit the way a tray of freshly made baklava does — shatteringly crisp layers of golden phyllo, a fragrant walnut filling spiced with cinnamon and cardamom, and a honey syrup that soaks into every corner and makes the whole thing glisten. The process is more meditative than difficult: you layer, butter, layer, butter, and the oven does the heavy lifting from there. Cutting the diamond pattern before baking is the key move that keeps those gorgeous layers intact, so don't skip it. The syrup gets made first and cooled completely, because pouring it cold over the piping-hot pastry straight from the oven is exactly what creates that iconic crisp-yet-sticky texture — you'll hear it sizzle and know you've done it right. Every ingredient here is straightforward and plant or dairy-based, so there's nothing to second-guess when you're cooking for guests who avoid pork or pork-derived products. The walnut filling is coarsely chopped rather than ground to a paste, which gives each bite real texture and substance rather than a dense, heavy center. After a long rest — ideally overnight — the syrup fully absorbs and the layers set into something that tastes like it came from a proper pastry shop.

Make the syrup first so it has time to cool completely before use. Combine the honey, water, sugar, cinnamon stick, and whole cloves in a small saucepan over medium heat, stirring until the sugar dissolves. Bring to a boil, then reduce the heat and simmer for 10 minutes, until slightly thickened. Remove from the heat, stir in the lemon juice, and let the syrup cool to room temperature. Remove and discard the cinnamon stick and cloves.
Pulse the walnut halves in a food processor 8–10 times until coarsely chopped — pieces should be roughly the size of a pea, not a fine powder. Transfer to a bowl and stir in the sugar, ground cinnamon, cardamom, and salt until evenly combined.
