Few desserts hit the way a well-made baklava does — shatteringly crisp layers of buttery phyllo, a fragrant walnut filling spiced with cinnamon and cardamom, and a honey syrup that soaks into every golden layer as it cools. The technique here is straightforward but deliberate: the syrup gets made first so it's fully cooled by the time the hot pastry comes out of the oven, and that temperature contrast is exactly what creates the iconic crisp-yet-sticky texture. Coarsely chopped walnuts give each bite real substance without turning the filling into a paste, and the whole cloves and cinnamon stick simmered into the syrup add a warmth that store-bought versions almost never capture. Cutting the diamond pattern before baking is a small but essential step — it keeps the delicate pastry intact and makes serving clean and effortless after that long, patience-testing rest. This is naturally a meat-free, seafood-free dessert built entirely from pantry staples and fresh nuts, so it fits a pescatarian table without any substitutions or workarounds. The overnight rest is genuinely worth it; the layers settle into something deeply flavored and cohesive rather than just sweet and flaky. Bring it to a dinner party, a holiday spread, or honestly just a Tuesday — it disappears fast either way.

Make the syrup first so it has time to cool completely before use. Combine the honey, water, sugar, cinnamon stick, and whole cloves in a small saucepan over medium heat, stirring until the sugar dissolves. Bring to a boil, then reduce the heat and simmer for 10 minutes, until slightly thickened. Remove from the heat, stir in the lemon juice, and let the syrup cool to room temperature. Remove and discard the cinnamon stick and cloves.
Pulse the walnut halves in a food processor 8–10 times until coarsely chopped — pieces should be roughly the size of a pea, not a fine powder. Transfer to a bowl and stir in the sugar, ground cinnamon, cardamom, and salt until evenly combined.
