Baklava is one of those desserts that feels impossibly luxurious, with its shatteringly crisp phyllo layers, fragrant walnut filling, and glossy syrup soaking into every golden corner. What makes this version especially appealing is that the syrup is built entirely from real honey, granulated sugar, water, and a squeeze of fresh lemon juice — no corn syrup, no mystery sweeteners, just clean, honest ingredients you can actually read on a label. Store-bought baklava and many packaged sweets quietly rely on high fructose corn syrup to extend shelf life or add sweetness on the cheap, so making it from scratch puts you fully in control. The honey syrup is spiced with a cinnamon stick and whole cloves, then strained out before pouring, giving the finished pastry a warm, aromatic depth that no shortcut syrup can replicate. The technique of pouring cool syrup over hot baklava straight from the oven is the real secret — that sizzling contrast is what creates the signature texture that's crisp on top and perfectly moist underneath. A long rest at room temperature lets everything absorb and settle, so by the time you cut along those pre-scored lines, each piece is a clean, layered little masterpiece. This is the kind of recipe you make once and never go back to buying again.

Make the syrup first so it has time to cool completely before use. Combine the honey, water, sugar, cinnamon stick, and whole cloves in a small saucepan over medium heat, stirring until the sugar dissolves. Bring to a boil, then reduce the heat and simmer for 10 minutes, until slightly thickened. Remove from the heat, stir in the lemon juice, and let the syrup cool to room temperature. Remove and discard the cinnamon stick and cloves.
Pulse the walnut halves in a food processor 8–10 times until coarsely chopped — pieces should be roughly the size of a pea, not a fine powder. Transfer to a bowl and stir in the sugar, ground cinnamon, cardamom, and salt until evenly combined.
