Few desserts hit the way a tray of freshly made baklava does — shatteringly crisp layers of phyllo, a fragrant walnut filling spiced with cinnamon and cardamom, and a honey syrup that soaks into every golden crevice. The filling is built from coarsely chopped walnuts seasoned with just enough sugar, warm spice, and a pinch of salt to make each bite genuinely complex. Many store-bought versions sneak in unexpected oils or flavoring agents, so making it from scratch gives you complete control over every ingredient — and this one keeps things beautifully straightforward. The syrup is the real secret weapon here: honey, water, sugar, a cinnamon stick, and whole cloves are simmered together, then finished with a squeeze of fresh lemon juice for brightness. Pouring that cooled syrup over the piping-hot pastry straight out of the oven creates the iconic crisp-yet-sticky texture that makes baklava so irresistible. The patience required — cutting before baking, letting it rest for hours — is absolutely worth it, because what comes out of that dish is genuinely stunning. Whether you're serving it at a dinner party or just treating yourself, this is the kind of recipe that earns serious bragging rights.

Make the syrup first so it has time to cool completely before use. Combine the honey, water, sugar, cinnamon stick, and whole cloves in a small saucepan over medium heat, stirring until the sugar dissolves. Bring to a boil, then reduce the heat and simmer for 10 minutes, until slightly thickened. Remove from the heat, stir in the lemon juice, and let the syrup cool to room temperature. Remove and discard the cinnamon stick and cloves.
Pulse the walnut halves in a food processor 8–10 times until coarsely chopped — pieces should be roughly the size of a pea, not a fine powder. Transfer to a bowl and stir in the sugar, ground cinnamon, cardamom, and salt until evenly combined.
