Few desserts hit the way this one does — shatteringly crisp layers of buttered phyllo, a fragrant walnut filling spiced with cinnamon and cardamom, and a honey syrup infused with whole cloves and a cinnamon stick that gets poured sizzling-hot over the finished pastry. The contrast of temperatures is exactly what gives baklava its signature texture: crisp on top, tender and syrup-soaked in the middle, with every bite tasting like it came from a serious pastry kitchen. The ingredient list is refreshingly straightforward — walnuts, butter, honey, spices, and phyllo — so there's nothing hidden to worry about, making this a genuinely clean bake from start to finish. Pulsing the walnuts to a coarse, pea-sized chop rather than a fine powder is the kind of detail that separates good baklava from great baklava, giving each layer real texture and presence. Cutting the diamond pattern before baking is non-negotiable and the recipe is upfront about it — the baked pastry will shatter under a knife, so scoring it first is the move. The long rest after the syrup pour is equally important; patience here means the layers fully absorb and set into something sliceable and spectacular. Make it the night before and it will only get better by the time you serve it.

Make the syrup first so it has time to cool completely before use. Combine the honey, water, sugar, cinnamon stick, and whole cloves in a small saucepan over medium heat, stirring until the sugar dissolves. Bring to a boil, then reduce the heat and simmer for 10 minutes, until slightly thickened. Remove from the heat, stir in the lemon juice, and let the syrup cool to room temperature. Remove and discard the cinnamon stick and cloves.
Pulse the walnut halves in a food processor 8–10 times until coarsely chopped — pieces should be roughly the size of a pea, not a fine powder. Transfer to a bowl and stir in the sugar, ground cinnamon, cardamom, and salt until evenly combined.
