Few things hit quite like a tray of freshly baked baklava — shatteringly crisp layers of buttered phyllo, a fragrant walnut filling spiced with cinnamon and cardamom, and a honey syrup that soaks into every golden layer as it cools. Walnuts are a standout ingredient here, celebrated for their omega-3 fatty acids, which makes this an especially satisfying treat when you're focused on nourishing yourself while nursing. The honey syrup is made from scratch with real honey, water, sugar, a cinnamon stick, and whole cloves, so you know exactly what's going into every bite — no mystery ingredients or additives to second-guess. Butter is used generously throughout, which supports the caloric demands that come with feeding a baby, and the whole recipe leans on wholesome, recognizable pantry staples. The technique of pouring cool syrup over hot pastry straight from the oven is what gives baklava its iconic texture — crisp on the outside, tender and syrupy within — and it's genuinely one of the most satisfying kitchen moments you'll experience. This keeps beautifully at room temperature, so you can make it ahead and have something indulgent ready to reach for during those long feeding sessions. It's a labor of love, but every step is straightforward, and the result is a showstopper that tastes like it came from a specialty bakery.

Make the syrup first so it has time to cool completely before use. Combine the honey, water, sugar, cinnamon stick, and whole cloves in a small saucepan over medium heat, stirring until the sugar dissolves. Bring to a boil, then reduce the heat and simmer for 10 minutes, until slightly thickened. Remove from the heat, stir in the lemon juice, and let the syrup cool to room temperature. Remove and discard the cinnamon stick and cloves.
Pulse the walnut halves in a food processor 8–10 times until coarsely chopped — pieces should be roughly the size of a pea, not a fine powder. Transfer to a bowl and stir in the sugar, ground cinnamon, cardamom, and salt until evenly combined.
