Few desserts hit the way a tray of freshly made baklava does — shatteringly crisp layers of phyllo, a fragrant walnut filling spiced with cinnamon and cardamom, and a honey syrup that soaks into every golden layer as it cools. The magic here is in the technique: the syrup is made first and left to cool completely, so when it meets the piping-hot pastry straight from the oven, it creates that iconic crisp-yet-sticky texture that store-bought versions almost never get right. Speaking of store-bought, packaged sweets and pre-made pastries are notorious for containing synthetic preservatives like BHA and BHT, which makes a from-scratch approach like this one genuinely worth the effort. Every ingredient in this recipe — walnut halves, real honey, unsalted butter, whole spices, fresh lemon juice — is exactly what it sounds like, with no additives hiding in the mix. The walnut filling is pulsed just coarsely enough to give each bite real texture and richness without turning into paste. Patience is the only secret weapon: the baklava needs at least four hours to rest so the syrup fully absorbs and the layers settle into something truly spectacular. Once you've made it this way, it's hard to go back to anything else.

Make the syrup first so it has time to cool completely before use. Combine the honey, water, sugar, cinnamon stick, and whole cloves in a small saucepan over medium heat, stirring until the sugar dissolves. Bring to a boil, then reduce the heat and simmer for 10 minutes, until slightly thickened. Remove from the heat, stir in the lemon juice, and let the syrup cool to room temperature. Remove and discard the cinnamon stick and cloves.
Pulse the walnut halves in a food processor 8–10 times until coarsely chopped — pieces should be roughly the size of a pea, not a fine powder. Transfer to a bowl and stir in the sugar, ground cinnamon, cardamom, and salt until evenly combined.
