Few desserts hit the way a tray of freshly made baklava does — shatteringly crisp layers of phyllo, a fragrant walnut filling spiced with cinnamon and cardamom, and a honey syrup that soaks into every golden layer as it cools. The filling is built from coarsely chopped walnut halves seasoned with sugar, warm spices, and just a pinch of salt, so every bite has real texture and depth rather than a dense, pasty center. The syrup is infused with a cinnamon stick and whole cloves before a splash of lemon juice brightens the whole thing — it's aromatic, floral, and just the right amount of sweet. Pouring that cooled syrup over the piping-hot pastry straight from the oven is the move that creates the iconic crisp-yet-sticky texture, and yes, the sizzle is deeply satisfying. The ingredient list here is naturally free of grain-based fillers or malt-derived additives that can sneak into store-bought versions, so you know exactly what's going into every layer. Patience is the only real skill required — letting the baklava rest for several hours allows the syrup to fully absorb and the layers to set into clean, cuttable pieces. This is the kind of recipe you make once and then find yourself making for every gathering after that.

Make the syrup first so it has time to cool completely before use. Combine the honey, water, sugar, cinnamon stick, and whole cloves in a small saucepan over medium heat, stirring until the sugar dissolves. Bring to a boil, then reduce the heat and simmer for 10 minutes, until slightly thickened. Remove from the heat, stir in the lemon juice, and let the syrup cool to room temperature. Remove and discard the cinnamon stick and cloves.
Pulse the walnut halves in a food processor 8–10 times until coarsely chopped — pieces should be roughly the size of a pea, not a fine powder. Transfer to a bowl and stir in the sugar, ground cinnamon, cardamom, and salt until evenly combined.
