Few desserts hit the way a properly made baklava does — shatteringly crisp layers of golden phyllo, a fragrant walnut filling spiced with cinnamon and cardamom, and a honey syrup that soaks in and makes every bite sticky in the best possible way. What makes this version especially appealing is how clean and straightforward the ingredient list is: walnuts, butter, honey, warm spices, and a squeeze of fresh lemon juice are all you need. Store-bought baklava and packaged sweets often sneak in artificial dyes to make them look more vibrant, but this one gets its gorgeous amber color entirely from the honey and the oven. The syrup is built from scratch with a cinnamon stick and whole cloves, then strained out, so the flavor is deep and aromatic without any shortcuts. The technique of pouring cool syrup over hot pastry is the real secret — that sizzle is what creates the iconic texture that's crisp on top and lusciously moist underneath. Cutting the diamond pattern before baking is a small but essential step that keeps the delicate layers intact, and the overnight rest lets everything settle into something truly special. This is the kind of recipe you make once and then feel obligated to make for every gathering forever.

Make the syrup first so it has time to cool completely before use. Combine the honey, water, sugar, cinnamon stick, and whole cloves in a small saucepan over medium heat, stirring until the sugar dissolves. Bring to a boil, then reduce the heat and simmer for 10 minutes, until slightly thickened. Remove from the heat, stir in the lemon juice, and let the syrup cool to room temperature. Remove and discard the cinnamon stick and cloves.
Pulse the walnut halves in a food processor 8–10 times until coarsely chopped — pieces should be roughly the size of a pea, not a fine powder. Transfer to a bowl and stir in the sugar, ground cinnamon, cardamom, and salt until evenly combined.
