In a large bowl, combine the pork strips with 1 tablespoon of the olive oil, cumin, smoked paprika, chili powder, garlic powder, onion powder, salt, black pepper, and 1 tablespoon lime juice. Toss until every strip is evenly coated, then let the pork marinate at room temperature for 15 minutes.
While the pork marinates, make the pico de gallo. Combine the diced Roma tomatoes, white onion, jalapeño, cilantro, lime juice, and salt in a bowl. Stir to combine, then set aside at room temperature to let the flavors come together.
