Combine the rinsed lentils and vegetable broth in a medium saucepan over medium-high heat. Bring to a boil, then reduce heat to low, cover, and simmer for 20–22 minutes, until the lentils are tender and have absorbed most of the liquid. Remove from heat and set aside.
While the lentils cook, heat the olive oil in a large skillet over medium heat until shimmering. Add the diced yellow onion and cook, stirring occasionally, until softened and translucent, about 5 minutes. Add the minced garlic and cook, stirring constantly, until fragrant, about 1 minute.
