These bars are the kind of treat that makes you forget you're working around any dietary restrictions at all ā they're genuinely, unapologetically delicious. A tender cassava and tapioca crust gives way to a jammy, spiced apricot filling, all crowned with toasted shredded coconut that turns golden and fragrant in the oven. Every layer is naturally free from tomatoes, peppers, potatoes, and the rest of the nightshade family, so there's no swapping or substituting required ā the recipe is built that way from the ground up. The warm notes of Ceylon cinnamon and ginger in the filling make the apricot taste almost caramel-like, while the coconut topping adds just enough chew and crunch to keep things interesting. Cassava flour and tapioca starch work together beautifully here, creating a crust that holds its shape when sliced without turning crumbly or dense. Once cooled and cut, these bars are easy to pack up, share, or quietly eat over the kitchen sink before anyone else notices they're done.

Preheat the oven to 350°F (175°C). Line an 8Ć8-inch baking pan with parchment paper, leaving an overhang on two sides for easy lifting.
Make the apricot filling: combine the chopped dried apricots, water, 2 tbsp honey, lemon juice, and ground ginger in a medium saucepan over medium heat. Cook, stirring occasionally, until the apricots are very soft and most of the liquid has been absorbed, about 10ā12 minutes. Transfer to a food processor and pulse until a thick, spreadable paste forms. Set aside.
