These bars are the kind of treat that looks impressive on a plate but comes together with a surprisingly short ingredient list and no fussy techniques. The base is a tender, crumbly crust built from cassava flour and tapioca starch, lightly sweetened with honey and warmed with a hint of Ceylon cinnamon. On top of that sits a jammy apricot filling — dried apricots simmered down with lemon juice and ginger into a thick, fragrant paste that tastes like sunshine in every bite. The whole thing is finished with a toasted coconut topping that turns golden in the oven and adds just the right amount of chew and crunch. Every layer is naturally sweetened and free from the tree nuts that can sneak into packaged bars and snack foods, so you can bake and share with total confidence. The parchment sling makes lifting and slicing clean and easy, giving you neat, bakery-worthy bars without any drama. Whether you're packing them for a lunchbox or setting them out for guests, they disappear fast.

Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two sides for easy lifting.
Make the apricot filling: combine the chopped dried apricots, water, 2 tbsp honey, lemon juice, and ground ginger in a medium saucepan over medium heat. Cook, stirring occasionally, until the apricots are very soft and most of the liquid has been absorbed, about 10–12 minutes. Transfer to a food processor and pulse until a thick, spreadable paste forms. Set aside.
