Warm, flaky, and filled with tender cinnamon-spiced apples, this classic strudel is the kind of dessert that makes a kitchen smell absolutely incredible. Layers of buttered phyllo bake up shatteringly crisp on the outside while the filling turns soft and syrupy within — it's a beautiful contrast of textures in every slice. Ceylon cinnamon brings a slightly sweeter, more delicate spice than the standard variety, which lets the natural flavor of the apples really shine through. A scatter of breadcrumbs beneath the filling is the old-school trick that keeps the pastry from going soggy, and it genuinely works. The whole thing is naturally free of coffee, tea, chocolate, or any other stimulants, so it's a dessert you can serve at any hour without a second thought. A dusting of powdered sugar right before serving gives it that gorgeous bakery-window finish that makes people reach for a slice before it even hits the table.

Preheat the oven to 375°F (190°C). Line a large baking sheet with parchment paper.
Melt 1 tbsp butter in a large skillet over medium heat. Add the sliced apples, granulated sugar, and Ceylon cinnamon, and cook, stirring occasionally, until the apples are just softened and the sugar has dissolved into a light syrup, about 6–8 minutes. Remove from heat and let cool for 5 minutes.
