Earthy sage, warm cinnamon, and sweet apple slices might sound like an unusual combination with ground turkey, but one bite and it all makes perfect sense. The fresh herbs and AIP-friendly spices — turmeric, ginger, and Ceylon cinnamon — build a deeply savory, lightly fragrant base that feels anything but restrictive. Bone broth and a splash of apple cider vinegar create a glossy pan sauce that ties everything together without a single nightshade, grain, or legume in sight. Cooking on the autoimmune protocol often means giving up the convenience of bold, pre-seasoned dishes, but this skillet proves you can get serious depth of flavor using only compliant pantry staples. Everything comes together in one pan in well under 30 minutes, which makes it genuinely weeknight-friendly for a protocol that can otherwise feel demanding. It serves four, so it's great for meal prep or a family dinner straight from the skillet with a sprinkle of fresh parsley on top.

AIP restricts added sweeteners, but small occasional amounts of unrefined honey are accepted on the protocol; the ~1/4 teaspoon per serving here likely stays within that limited allowance. If you prefer to always avoid honey, please tap it and change its rating to Red.

Heat 1 tbsp of the coconut oil in a 12-inch skillet over medium-high heat until shimmering. Add the ground turkey and cook, breaking it into large crumbles with a wooden spoon, until no pink remains and an instant-read thermometer inserted into the thickest portion reads 165°F (74°C), about 7–9 minutes. Transfer the cooked turkey to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp coconut oil to the skillet. Add the onion and cook, stirring occasionally, until softened and translucent, about 5 minutes.
