Fill a large pot with 1–2 inches of water and bring to a boil over high heat. Place the cauliflower florets in a steamer basket set over the boiling water, cover, and steam for 12–15 minutes, until completely tender when pierced with a fork and a floret breaks apart with gentle pressure.
While the cauliflower steams, heat the coconut oil in a large skillet over medium heat until shimmering. Add the diced apple and cook, stirring occasionally, for 4–5 minutes, until softened and lightly golden at the edges.
