Rich, slow-braised duck with sweet apple and earthy sage is the kind of stew that makes a kitchen smell absolutely incredible — deeply savory, a little fruity, and warming all the way through. For anyone navigating a yeast-free lifestyle, finding hearty, satisfying meals that don't rely on fermented or yeast-derived ingredients can feel limiting, but this one delivers serious depth without any of those concerns. The liquid base here is built from pomegranate juice, apple cider vinegar, and bone broth, giving the broth a complex, slightly tangy backbone that tastes like it simmered all day — because it did. Duck legs are seared until the skin turns deep golden brown before braising, which locks in flavor and gives the finished dish that restaurant-quality richness. Tart Granny Smith apples go in during the final stretch so they soften just enough to melt into the broth without turning to mush, and the sweet potato adds body and a gentle sweetness that balances the whole pot. Fresh sage, thyme, and a touch of turmeric and ginger round everything out with warmth and fragrance. Serve it straight from the Dutch oven with a scatter of fresh parsley and plenty of that gorgeous broth ladled over the top.

Pat the duck legs thoroughly dry with paper towels and season all over with 3/4 tsp of the salt.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, until lightly browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered duck fat from the pot.
