Rich, slow-braised duck legs in a fragrant broth of pomegranate juice, apple cider vinegar, and bone broth — this is the kind of stew that makes a cold evening feel genuinely luxurious. Tart Granny Smith apples and sweet potato add body and natural sweetness, while fresh sage, thyme, and a whisper of turmeric and ginger give the whole pot a deeply aromatic, almost autumnal character. Every ingredient here is naturally grain-free, so there's no need to swap out a flour-based roux or hunt down a specialty thickener — the braising liquid reduces into something silky and satisfying all on its own. The technique is straightforward: a hard sear on the duck skin first, then a long, gentle braise that coaxes the meat until it's practically falling off the bone. Coconut oil handles the searing beautifully, and the rendered duck fat left behind adds another layer of savory depth to the vegetables. It's the kind of dish that looks and tastes like it took serious culinary effort, but the Dutch oven does most of the heavy lifting. Finish each bowl with a scatter of fresh parsley and you've got a showstopper that happens to work for anyone navigating wheat or gluten concerns without compromise.

Pat the duck legs thoroughly dry with paper towels and season all over with 3/4 tsp of the salt.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, until lightly browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered duck fat from the pot.
