Duck is the star here, and it delivers everything you want in a cold-weather braise — rich, deeply savory meat that falls away from the bone after a long, slow simmer. Searing the legs skin-side down first builds a gorgeous golden crust and renders out enough fat to give the whole pot incredible depth, no poultry shortcuts needed. Tart Granny Smith apples and pomegranate juice bring a bright, fruity contrast that cuts through the richness beautifully, while fresh sage, thyme, and a touch of turmeric and ginger layer in warmth without overwhelming the dish. Sweet potato and carrots soak up all that braising liquid and turn meltingly tender, making every spoonful feel hearty and complete. For anyone navigating holiday tables or weeknight dinners where the usual bird just isn't an option, this stew is a genuinely exciting alternative rather than a consolation prize. The bone broth base keeps things nourishing and clean, and the whole thing comes together in a single Dutch oven with minimal fuss. Finish each bowl with a scatter of fresh parsley and prepare for serious requests to make it again.

Pat the duck legs thoroughly dry with paper towels and season all over with 3/4 tsp of the salt.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, until lightly browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered duck fat from the pot.
