Duck stew has a reputation for being rich and deeply savory, and this braised version absolutely delivers — with a twist of tart apple, sweet potato, and pomegranate juice that makes the whole pot smell incredible. Searing the duck legs skin-side down first builds a gorgeous golden crust and renders out enough fat to give the broth serious body, all without a drop of soy in sight. Coconut oil, bone broth, and apple cider vinegar do the heavy lifting here, so there's no need to scrutinize labels for hidden soy derivatives the way you often have to with store-bought broths or marinades. The apples go in during the final stretch of braising so they turn tender without dissolving, adding a gentle sweetness that plays beautifully against the earthy sage and warm turmeric. Sweet potato and carrots round out the bowl with color and substance, making this feel like a proper one-pot meal rather than just a braise. It's the kind of recipe that rewards patience — low heat, a covered Dutch oven, and a little time transform humble duck legs into something genuinely fall-off-the-bone special.

Pat the duck legs thoroughly dry with paper towels and season all over with 3/4 tsp of the salt.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, until lightly browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered duck fat from the pot.
