Rich, slow-braised duck legs with tart apple, sweet potato, and fragrant sage make for a stew that feels genuinely special — the kind of dish that fills the whole kitchen with an aroma you want to bottle. The duck is seared until the skin turns deep golden brown before it ever hits the braising liquid, which means you get layers of flavor that a simple weeknight simmer just can't match. Pomegranate juice and apple cider vinegar bring a subtle brightness that cuts through the richness of the duck, while turmeric and ginger add warmth without overwhelming the other ingredients. Granny Smith apples go in toward the end so they turn tender but still hold their shape, giving every spoonful a little sweet-tart contrast against the savory broth. Because the whole recipe is built around whole vegetables, fresh herbs, and bone broth, there's no need to scan labels for hidden seafood derivatives or shared-facility warnings — every ingredient here is straightforward and easy to verify. This is the kind of stew that rewards patience: the longer the duck braises, the more the meat pulls away from the bone in the most satisfying way. Finish each bowl with a scatter of fresh parsley and you've got a deeply comforting, restaurant-worthy meal that comes together in a single Dutch oven.

Pat the duck legs thoroughly dry with paper towels and season all over with 3/4 tsp of the salt.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, until lightly browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered duck fat from the pot.
