Duck stew done right is one of those deeply satisfying cold-weather meals that makes the whole kitchen smell incredible, and this braised version delivers on every front. The duck legs are seared until the skin turns deep golden brown before being nestled into a fragrant broth built from pomegranate juice, apple cider vinegar, and bone broth — layers of savory, tangy, and subtly sweet that develop beautifully over a long, slow braise. Tart apple chunks, sweet potato, and carrots round out the pot, while fresh sage, thyme, and a touch of turmeric and ginger give the whole thing a warmly aromatic backbone. Every ingredient here is naturally grain-free, so there's no need to scrutinize labels or swap anything out — the recipe simply works as written. The practical doneness target is fork-tender meat that pulls cleanly from the bone, which is the real signal that the braise has done its job. It's the kind of stew that feels restaurant-worthy but comes together in a single Dutch oven with straightforward technique anyone can follow. Finish each bowl with a scatter of fresh parsley and plenty of that glossy, fruit-forward broth.

Pat the duck legs thoroughly dry with paper towels and season all over with 3/4 tsp of the salt.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, until lightly browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered duck fat from the pot.
