Rich, slow-braised duck legs in a fragrant broth of pomegranate juice, apple cider vinegar, and bone broth — this is the kind of stew that makes a cold evening feel like a proper occasion. Tart Granny Smith apples and sweet potato add body and natural sweetness, while fresh sage, thyme, and a whisper of turmeric give the whole pot a deeply savory, aromatic backbone. The sear on the duck skin is what sets this recipe apart: that golden crust locks in flavor before everything braises low and slow into fall-off-the-bone tenderness. Grain-free eating can sometimes feel like you're giving up the hearty, filling dishes you love most, but this stew proves otherwise — every bowl is packed with vegetables, rich braising liquid, and satisfying protein without a single grain in sight. Coconut oil stands in as the cooking fat, and the bone broth keeps the base clean and deeply nourishing. The apples go in during the final stretch so they stay tender without turning to mush, which is a small detail that makes a big difference in the finished dish. Finish with a scatter of fresh parsley and you have something that looks and tastes like it took far more effort than it did.

Pat the duck legs thoroughly dry with paper towels and season all over with 3/4 tsp of the salt.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, until lightly browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered duck fat from the pot.
