Duck is one of those proteins that feels instantly special — rich, deeply savory, and nothing like the usual weeknight rotation. This braised stew leans into that richness beautifully, pairing slow-cooked duck legs with tart Granny Smith apples, sweet potato, and fragrant sage for a bowl that tastes like it took serious culinary skill to pull off. For anyone navigating a red meat allergy, poultry-based stews like this one are a genuinely satisfying way to get that hearty, stick-to-your-ribs comfort without any beef or lamb in the pot. The braising liquid — built from pomegranate juice, apple cider vinegar, and bone broth — develops a complex, slightly tangy depth that makes the whole dish feel far more sophisticated than a simple weeknight braise has any right to be. Turmeric and ginger add warmth without heat, while the fresh sage and thyme keep everything grounded and aromatic. The apples go in during the final stretch so they soften just enough to melt into the broth without turning to mush, giving each spoonful a subtle sweetness that balances the savory duck perfectly. Serve it straight from the Dutch oven with a scatter of fresh parsley and you've got a showstopper that's as cozy as it is impressive.

Pat the duck legs thoroughly dry with paper towels and season all over with 3/4 tsp of the salt.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, until lightly browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered duck fat from the pot.
