Duck is one of those deeply satisfying proteins that doesn't get nearly enough weeknight attention, and this braised stew is a reminder of exactly what it's capable of. The legs are seared until the skin turns a deep, crackling gold before being nestled into a fragrant broth built from pomegranate juice, apple cider vinegar, and bone broth — layers of sweet, tangy, and savory that develop beautifully over a long, slow braise. Tart apple chunks, sweet potato, and carrots round out the pot, while fresh sage, thyme, and a whisper of turmeric and ginger give the whole thing a warmth that feels almost autumnal. Because the recipe relies entirely on whole, unprocessed ingredients — duck, vegetables, fruit, and aromatics — there's no need to scan labels or second-guess what's hiding in a packaged shortcut. The coconut oil used for searing keeps everything clean and adds a subtle richness without competing with the other flavors. By the time the duck is fork-tender and pulling away from the bone, the broth has absorbed all of those braising juices into something genuinely craveable. A scatter of fresh parsley at the end brightens the whole bowl and makes it look as good as it tastes.

Pat the duck legs thoroughly dry with paper towels and season all over with 3/4 tsp of the salt.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, until lightly browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered duck fat from the pot.
