Rich, slow-braised duck legs in a fragrant broth of pomegranate juice, apple cider vinegar, and bone broth — this is cold-weather cooking at its most satisfying. Tart Granny Smith apples, sweet potato, and carrots melt into the stew alongside fresh sage and thyme, creating layers of flavor that taste like they took far more effort than they did. The long braise does all the heavy lifting, leaving the duck meat so tender it practically falls from the bone on its own. Every ingredient here is naturally free from peanuts and peanut-derived oils, so there's no label-scanning or substitution stress — just straightforward, wholesome cooking with a short, clean list. Coconut oil handles the initial sear, building a gorgeous golden crust on the skin before the braising liquid takes over and works its magic. The pomegranate juice adds a subtle tartness that balances the richness of the duck beautifully, and the ground turmeric and ginger give the broth a warm, earthy depth without overpowering the other flavors. Finish each bowl with a scatter of fresh parsley and you've got a dinner that looks and tastes genuinely impressive.

Pat the duck legs thoroughly dry with paper towels and season all over with 3/4 tsp of the salt.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, until lightly browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered duck fat from the pot.
