Rich, slow-braised duck legs in a fragrant broth of pomegranate juice, apple cider vinegar, and bone broth — this is cold-weather comfort food at its most satisfying. Tart Granny Smith apples and sweet potato add body and a gentle sweetness, while fresh sage, thyme, and a whisper of turmeric give the whole pot a warmth that builds with every spoonful. The long braise does the heavy lifting, coaxing the duck meat until it's practically falling off the bone and the broth has absorbed every last bit of flavor from the vegetables and aromatics. Every ingredient here is naturally grain-free, so there's no need to scan labels or swap anything out — the recipe is clean from the first sear to the final ladle. Searing the duck skin-side down until it's deep golden before braising is the move that sets this dish apart, locking in richness that store-bought shortcuts simply can't replicate. It's the kind of stew that makes the whole kitchen smell incredible and tastes even better than it looks in the bowl.

Pat the duck legs thoroughly dry with paper towels and season all over with 3/4 tsp of the salt.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, until lightly browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered duck fat from the pot.
