Rich, slow-braised duck with tart apple and earthy sage is the kind of deeply satisfying stew that feels like it took serious culinary skill — and honestly, it kind of does, but the steps are completely manageable at home. Every ingredient here is whole and straightforward, which is exactly what makes this dish such a reliable choice when you're avoiding hidden flavor enhancers that sneak into so many store-bought broths, spice blends, and packaged stocks. Using bone broth — homemade or a clean-label brand — keeps the base pure, while pomegranate juice and apple cider vinegar bring a bright, complex depth that means you never miss anything. The duck legs get a proper golden sear before braising low and slow, building layers of flavor entirely from real aromatics: fresh sage, thyme, garlic, turmeric, and ginger. Sweet potato and carrots soak up the fragrant broth as everything cooks down together, and the Granny Smith apples go in toward the end so they stay tender without turning to mush. The result is fall-off-the-bone duck in a glossy, herb-scented broth that tastes like it simmered all day — because it basically did, and every minute is worth it. Finish each bowl with a scatter of fresh parsley and you've got a showstopper that's as clean as it is impressive.

Pat the duck legs thoroughly dry with paper towels and season all over with 3/4 tsp of the salt.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, until lightly browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered duck fat from the pot.
