Rich, slow-braised duck legs nestled among sweet potato, tart apple chunks, and garden vegetables — this stew is the kind of deeply satisfying cold-weather cooking that feels like it took all day, even when the oven is doing most of the work. The braising liquid is built on bone broth, pomegranate juice, and apple cider vinegar, which means every spoonful carries a complex, slightly tangy depth without a drop of cream or butter in sight. Coconut oil handles the initial sear, and the duck renders out its own fat as it cooks, so the richness here is entirely natural and completely free of dairy. Fresh sage, thyme, and a whisper of turmeric and ginger layer in warmth and earthiness that make the whole kitchen smell incredible. The Granny Smith apples go in toward the end so they soften just enough to melt into the broth while still holding their shape — a small detail that makes a big difference in texture. If you've ever felt like hearty, restaurant-worthy stews were off-limits because of hidden dairy in the base or finishing butter stirred in at the end, this recipe is a genuinely satisfying answer to that problem. Scatter a little fresh parsley over the top before serving and you've got a bowl that looks as good as it tastes.

Pat the duck legs thoroughly dry with paper towels and season all over with 3/4 tsp of the salt.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, until lightly browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered duck fat from the pot.
