Rich, slow-braised duck stew can feel like it needs a drizzle of something sweet to balance the savory depth — but this recipe proves otherwise. Tart Granny Smith apples and pomegranate juice bring all the brightness and natural sweetness you need, no added honey or sweeteners required. The duck legs are seared until the skin is deeply golden, then nestled into a fragrant broth built with bone broth, apple cider vinegar, and warm spices like turmeric and ginger, so every layer of flavor earns its place. Fresh sage, thyme, and a bay leaf perfume the braise as it slowly works its way to fork-tender, fall-off-the-bone perfection. Sweet potato and carrots soak up the savory-fruity broth and turn meltingly soft, while the apple chunks go in toward the end so they stay tender without dissolving into the stew. It's the kind of deeply satisfying cold-weather bowl that tastes like it took serious effort — but the Dutch oven does most of the heavy lifting once everything is in the pot. Finish with a scatter of fresh parsley and you've got a stunning, naturally sweetened dish that doesn't compromise on flavor for a single second.

Pat the duck legs thoroughly dry with paper towels and season all over with 3/4 tsp of the salt.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, until lightly browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered duck fat from the pot.
