Duck stew is the kind of deeply satisfying cold-weather cooking that rewards patience, and this braised version delivers rich, fall-off-the-bone meat in a broth that tastes like it took all day. The combination of tart Granny Smith apples, fresh sage, and pomegranate juice creates a layered sweetness that feels complex without relying on any processed sweeteners — every drop of flavor comes straight from whole ingredients. That matters a lot when you're trying to avoid high-fructose corn syrup, which sneaks into so many store-bought broths, juices, and condiments; here, you control every component from the bone broth to the apple cider vinegar. Searing the duck legs skin-side down first builds a gorgeous golden crust and renders out enough fat to keep the whole braise silky and luscious. Sweet potato and carrots soak up the herby, spiced broth alongside turmeric and ginger, making each bowl feel nourishing as well as indulgent. The apples go in during the final stretch so they stay tender without turning to mush, adding little pockets of brightness against the savory duck. It's a showstopper of a one-pot meal that proves clean, whole-food cooking doesn't have to sacrifice a single ounce of depth or comfort.

Pat the duck legs thoroughly dry with paper towels and season all over with 3/4 tsp of the salt.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, until lightly browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered duck fat from the pot.
