Rich, slow-braised duck stew is the kind of deeply satisfying cold-weather cooking that feels almost indulgent — and this version absolutely delivers. Duck legs are seared until the skin turns deep golden brown, then nestled into a fragrant broth built from pomegranate juice, apple cider vinegar, and bone broth, which gives the whole pot a gorgeous sweet-savory depth. Tart apple chunks, sweet potato, and carrots braise alongside fresh sage and thyme until everything is meltingly tender and the duck is practically falling off the bone. Ground turmeric and ginger add a gentle warmth that makes the broth feel complex without being fussy. For anyone navigating tree nut allergies, this recipe is naturally free of hazelnuts and any nut-based ingredients — every element on the list is straightforward, so there's no need to scrutinize labels or worry about unexpected additions hiding in the pot. It's a one-pot meal that looks and tastes like something you'd order at a serious restaurant, but comes together in your own Dutch oven with honest, whole ingredients. Finish each bowl with a scatter of fresh parsley and prepare for requests to make it again very soon.

Pat the duck legs thoroughly dry with paper towels and season all over with 3/4 tsp of the salt.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, until lightly browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered duck fat from the pot.
