Rich, slow-braised duck legs in a fragrant broth of bone broth, pomegranate juice, and apple cider vinegar — this is the kind of deeply nourishing stew that feels like a hug from the inside out. The combination of tart Granny Smith apples, sweet potato, and fresh sage creates a layered, almost autumnal flavor that makes the whole kitchen smell incredible. Every ingredient here is chosen with digestive wellness in mind: bone broth brings gut-supportive gelatin, apple cider vinegar adds a gentle digestive boost, and anti-inflammatory turmeric and ginger round out the spice profile without anything harsh or processed. Coconut oil replaces inflammatory fats for the sear, and the braising liquid stays completely free of grains, legumes, or anything that tends to cause trouble for sensitive systems. The long, low braise does the heavy lifting — by the time the duck is fork-tender and the apples have softened into the broth, you have a meal that's as easy on the gut as it is satisfying to eat. A scatter of fresh parsley at the end keeps things bright, but honestly, the stew is stunning on its own. This is comfort food that actually works with your body, not against it.

Pat the duck legs thoroughly dry with paper towels and season all over with 3/4 tsp of the salt.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, until lightly browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered duck fat from the pot.
