Rich, slow-braised duck legs nestled among sweet potato, carrots, and tender apple chunks make for a stew that feels genuinely special — the kind of deeply savory, aromatic bowl that earns a permanent spot in your cold-weather rotation. The flavor comes from real, whole ingredients: fresh sage, thyme, turmeric, ground ginger, and a splash of pomegranate juice that adds depth without relying on any citrus fruit or citric acid additives. That matters more than it sounds, because citric acid hides in a surprising number of broths, condiments, and packaged stocks — here, homemade or carefully sourced bone broth keeps the ingredient list clean from start to finish. A long, gentle braise does the heavy lifting, coaxing the duck meat until it's fork-tender and pulling away from the bone, while the apple cider vinegar rounds out the broth with just enough brightness. Searing the duck skin-side down first is the move that makes everything else better — that golden crust renders the fat and builds the fond that flavors the entire pot. The apples go in late so they soften without turning to mush, giving every spoonful a little sweetness against the savory, herb-scented broth. Finish with a scatter of fresh parsley and you've got a bowl that looks as good as it tastes.

Pat the duck legs thoroughly dry with paper towels and season all over with 3/4 tsp of the salt.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, until lightly browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered duck fat from the pot.
