Rich, slow-braised duck stew can feel like a luxury reserved for restaurants, but this one-pot version brings that same depth of flavor straight to your home kitchen. The combination of tart apple, sweet potato, and pomegranate juice creates a broth that is fruity and savory all at once, with fresh sage and thyme rounding everything out beautifully. Avoiding black pepper doesn't mean sacrificing warmth or complexity — ground turmeric and ginger step in to give the stew a gentle, aromatic backbone without any of the heat that pepper brings. Searing the duck legs until the skin turns deep golden brown is the move that makes this dish extraordinary, locking in richness before the long, low braise does its magic. The apples go in toward the end so they stay tender without turning to mush, adding little pockets of brightness throughout every bowl. It's the kind of stew that fills the kitchen with an incredible smell for hours and tastes even better than it looks.

Pat the duck legs thoroughly dry with paper towels and season all over with 3/4 tsp of the salt.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, until lightly browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered duck fat from the pot.
