Duck is one of those proteins that feels naturally suited to slow, cozy cooking, and this braised stew delivers exactly that kind of deep, satisfying warmth. The combination of tart apple, sweet potato, and fresh sage creates a layered flavor profile that feels almost autumnal — bright and earthy at the same time. For anyone navigating alpha-gal syndrome, mammalian meat is off the table, which makes poultry like duck an essential go-to, and this recipe leans into that beautifully rather than treating it as a workaround. Every ingredient here — from the coconut oil used for searing to the bone broth used for braising — is free from mammalian meat and dairy, so there are no hidden landmines to navigate. The technique matters too: searing the duck legs skin-side down first builds a gorgeous golden crust and renders out rich fat that flavors the whole pot. Pomegranate juice and apple cider vinegar add a subtle tartness to the broth that keeps the stew from feeling heavy, while turmeric and ginger bring gentle warmth without overpowering the other flavors. Serve it straight from the Dutch oven with a scatter of fresh parsley and you have a dinner that feels genuinely special without requiring any complicated substitutions.

Pat the duck legs thoroughly dry with paper towels and season all over with 3/4 tsp of the salt.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, until lightly browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered duck fat from the pot.
