Rich, deeply savory, and built entirely from whole ingredients, this braised duck stew is the kind of cold-weather cooking that makes the whole kitchen smell incredible. The natural sweetness here comes entirely from tart Granny Smith apples, sweet potato, and pomegranate juice — no refined sugar, no syrups, nothing added just to sweeten the pot. That combination of fruit and root vegetables creates a broth that tastes complex and almost wine-like without a drop of anything processed. Searing the duck legs skin-side down first builds a golden, crackling crust and renders enough fat to carry the aromatics — onion, garlic, fresh sage, thyme, and warming turmeric and ginger — deep into the braise. Apple cider vinegar adds a gentle brightness that keeps the richness of the duck in check, while bone broth gives the whole stew a silky, nourishing body. It's the kind of recipe that rewards patience: low heat, a tight lid, and just over an hour of hands-off braising until the meat is falling off the bone and the apples are just tender enough to melt into the broth. Scatter a little fresh parsley over the top and serve it straight from the Dutch oven for a dinner that feels genuinely special.

Pat the duck legs thoroughly dry with paper towels and season all over with 3/4 tsp of the salt.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, until lightly browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered duck fat from the pot.
