Homemade fruit leather is one of those snacks that feels almost magical — you start with a pile of fresh apples and end up with something chewy, sweet, and totally snackable. Every ingredient here is naturally free of wheat and gluten, so there's no swapping, substituting, or label-squinting required. The combination of honey, Ceylon cinnamon, and a squeeze of lemon juice turns simple cooked apples into a purée that smells incredible and tastes even better once it's slowly dried in the oven. Spreading the purée thin and even is the real trick to getting that satisfying, peel-away texture — and the silicone mat or parchment makes cleanup a breeze. It's a genuinely wholesome alternative to store-bought fruit snacks, which often sneak in additives or are processed on shared equipment. Once cooled and cut into strips, these roll up neatly in parchment and keep well on the counter or in the fridge, making them perfect for lunchboxes, road trips, or just grabbing off the kitchen counter.

Preheat the oven to 170°F (77°C). If your oven's lowest setting is 200°F (93°C), set it there and prop the door open slightly with a wooden spoon. Line an 18×13-inch rimmed baking sheet with a silicone baking mat or parchment paper.
Combine the chopped apples, honey, Ceylon cinnamon, lemon juice, and ground ginger (if using) in a medium saucepan over medium heat. Cook, stirring occasionally, until the apples are completely soft and beginning to break down, about 12–15 minutes.
