Homemade fruit leather is one of those snacks that feels almost magical — just real fruit, a drizzle of honey, and a low oven doing all the work. The apples are cooked down with Ceylon cinnamon, fresh lemon juice, and a touch of ginger until completely soft, then blended into a silky purée that bakes into a chewy, peel-and-roll treat. Store-bought versions can be surprisingly tricky to vet, with shared production lines and ingredient lists that sometimes hide grain-based additives, so making your own puts you fully in control. Every single ingredient here is straightforwardly fruit, spice, and honey — nothing to second-guess. The slow, low oven drying method is what gives the leather that satisfying chew without any crunch or brittleness, and spreading the purée to an even 1/8-inch thickness is the real secret to getting it right. Once cooled and cut into strips, each piece rolls up neatly in parchment for snacking on the go or tucking into lunchboxes all week long.

Preheat the oven to 170°F (77°C). If your oven's lowest setting is 200°F (93°C), set it there and prop the door open slightly with a wooden spoon. Line an 18×13-inch rimmed baking sheet with a silicone baking mat or parchment paper.
Combine the chopped apples, honey, Ceylon cinnamon, lemon juice, and ground ginger (if using) in a medium saucepan over medium heat. Cook, stirring occasionally, until the apples are completely soft and beginning to break down, about 12–15 minutes.
