Homemade fruit leather is one of those snacks that feels almost magical — you start with a pile of fresh apples and end up with something chewy, sweet, and totally snackable. The combination of honey, Ceylon cinnamon, and a squeeze of lemon juice gives this leather a warm, slightly floral depth that store-bought versions just can't match. Because the whole thing is built from whole fruit and a handful of pantry staples, there's no need to scan labels for hidden egg-based binders or coatings that sometimes sneak into packaged fruit snacks. The process is low and slow in the oven, letting the apple purée transform into a glossy, peel-and-roll sheet that holds together beautifully. Spreading the purée thin and even is the real trick here — an offset spatula and a little patience go a long way toward getting that perfect, uniform texture. Cut into strips and rolled in parchment, these keep well at room temperature for a week or in the fridge for up to a month, making them ideal for lunchboxes or afternoon snacking all week long.

Preheat the oven to 170°F (77°C). If your oven's lowest setting is 200°F (93°C), set it there and prop the door open slightly with a wooden spoon. Line an 18×13-inch rimmed baking sheet with a silicone baking mat or parchment paper.
Combine the chopped apples, honey, Ceylon cinnamon, lemon juice, and ground ginger (if using) in a medium saucepan over medium heat. Cook, stirring occasionally, until the apples are completely soft and beginning to break down, about 12–15 minutes.
