There is something deeply satisfying about a pot roast that fills the whole house with the smell of warm spices and slow-cooked beef, and this one delivers exactly that. A generous chuck roast gets seared until a dark, crackling crust forms, then it braises low and slow in a fragrant bath of unfiltered apple cider, bone broth, and apple cider vinegar — the kind of layered, slightly sweet cooking liquid that turns into its own incredible sauce. Ceylon cinnamon, turmeric, and ground ginger give the braise a subtle warmth that feels cozy without tipping into dessert territory. Carrots and parsnips soak up all of that flavor as they cook alongside the beef, so every component on the plate is worth eating. The whole thing comes together in a Dutch oven with no complicated techniques — just a solid sear, a quick sauté, and then the oven does the heavy lifting for a few hours. Every ingredient here is straightforward and naturally free of tree nuts, so there is no label-scanning or substitution stress involved. Finish it with a scatter of fresh parsley and a generous ladle of the braising liquid, and dinner is genuinely something to look forward to.

Preheat the oven to 325°F (165°C). Pat the chuck roast thoroughly dry with paper towels, then season all over with 1 tsp of the salt.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the roast and sear undisturbed for 4–5 minutes per side, until a deep brown crust forms and the meat releases easily from the pot. Transfer the roast to a plate.
