Pot roast is the kind of deeply satisfying comfort food that can feel off-limits when you're avoiding nightshades — so many classic braises lean on tomato paste or canned tomatoes for depth and body. This version builds that same rich, savory foundation without any of it, relying instead on unfiltered apple cider, bone broth, and a splash of apple cider vinegar to create a braising liquid that is complex, slightly sweet, and absolutely irresistible. Coconut aminos step in for any soy-based sauces, adding a subtle umami note that rounds everything out beautifully. Warm spices like turmeric, ginger, and Ceylon cinnamon give the braise an aromatic warmth that makes the whole kitchen smell incredible while it slowly does its thing in the oven. Carrots and parsnips braise alongside the chuck roast, soaking up all that cider-scented liquid until they're meltingly tender. After three-plus hours at a low temperature, the beef shreds effortlessly and the braising liquid has reduced into something you'll want to spoon over every single bite. It's the kind of meal that feels special enough for a Sunday dinner but requires almost no active effort once it's in the oven.

Preheat the oven to 325°F (165°C). Pat the chuck roast thoroughly dry with paper towels, then season all over with 1 tsp of the salt.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the roast and sear undisturbed for 4–5 minutes per side, until a deep brown crust forms and the meat releases easily from the pot. Transfer the roast to a plate.
