Slow-braised chuck roast is one of those deeply satisfying meals that fills the whole house with an aroma that makes everyone wander into the kitchen asking when dinner will be ready. What makes this version special is the braising liquid — unfiltered apple cider, bone broth, apple cider vinegar, and coconut aminos come together to create something rich, slightly tangy, and warmly spiced without a single gram of added sugar in sight. Coconut aminos stand in beautifully for soy sauce, delivering that savory depth while keeping the ingredient list completely clean. The warm spices — turmeric, ginger, and Ceylon cinnamon — give the braising liquid a subtle complexity that tastes like it took far more effort than it did. Carrots and parsnips braise right alongside the beef, soaking up all that flavor and turning perfectly tender by the time the roast is done. After three-plus hours in a low oven, the chuck pulls apart effortlessly and the natural sweetness from the cider and root vegetables does all the heavy lifting. It's the kind of cozy, nourishing dinner that proves you don't need anything extra to make something genuinely crave-worthy.

Preheat the oven to 325°F (165°C). Pat the chuck roast thoroughly dry with paper towels, then season all over with 1 tsp of the salt.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the roast and sear undisturbed for 4–5 minutes per side, until a deep brown crust forms and the meat releases easily from the pot. Transfer the roast to a plate.
