Slow-braised brisket is the kind of centerpiece dish that makes a whole house smell incredible, and this version delivers deep, layered flavor without a drop of sesame oil or any hidden sesame-based sauces. The brisket gets rubbed with turmeric, ginger, and sea salt before being seared in coconut oil until it's beautifully golden, building a savory crust that carries through every bite. From there, unfiltered apple cider, bone broth, coconut aminos, and a touch of honey create a braising liquid that's sweet, tangy, and rich all at once — no soy sauce or tahini needed. Carrots, celery, and onion soften into the liquid over hours in the oven, becoming almost silky by the time the brisket hits fork-tender perfection. A whisper of Ceylon cinnamon and fresh herbs like thyme and rosemary round out the braise with warmth that feels both rustic and refined. Sliced against the grain and spooned with those glossy pan juices and vegetables, this is genuinely impressive comfort food that happens to sidestep one of the trickier allergens to avoid in savory, slow-cooked dishes.

4 sprigs fresh thyme
2 sprigs fresh rosemary
2 bay leaves
¼ tsp ground ceylon cinnamon
For serving
2 tbsp fresh parsley, roughly chopped (optional)

Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the brisket fat-side down and sear undisturbed for 4–5 minutes, until deep golden brown and releasing easily from the pot. Flip and sear the other side for 3–4 minutes until browned.
