Slow-braised brisket is the kind of meal that fills the whole house with an aroma so good people start wandering into the kitchen hours before dinner is ready. This version gets its depth from unfiltered apple cider, bone broth, and a touch of honey, with warm spices like turmeric, ginger, and Ceylon cinnamon rubbed right into the meat before it ever hits the pot. A quick sear in coconut oil builds a gorgeous crust, and then the Dutch oven does the heavy lifting low and slow until the brisket is fall-apart tender and soaking in that glossy, fragrant braising liquid. Every ingredient here — from the coconut aminos to the apple cider vinegar — is naturally free of rye and any grain-based additives, so there's no label-scanning or substitution stress involved. The braised carrots, celery, and onion become silky and sweet as they cook down alongside the meat, making the whole dish a complete, satisfying centerpiece. Slice it against the grain for clean, elegant portions or pull it into rustic chunks and pile it high on a platter with plenty of that incredible pan sauce spooned over the top. Fresh parsley at the end adds a bright finish that cuts right through the richness.

Preheat the oven to 325°F (165°C). Pat the brisket completely dry with paper towels. In a small bowl, combine the salt, turmeric, and ginger, then rub the mixture evenly over all sides of the brisket.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the brisket fat-side down and sear undisturbed for 4–5 minutes, until deep golden brown and releasing easily from the pot. Flip and sear the other side for 3–4 minutes until browned. Transfer the brisket to a plate and set aside.
