Slow-braised brisket is the kind of centerpiece dish that makes a whole house smell incredible, and this version delivers deep, complex flavor without a drop of butter, cream, or any other dairy in sight. The magic here is in the braising liquid — unfiltered apple cider, bone broth, a splash of apple cider vinegar, and a touch of honey create a sweet-savory bath that keeps the meat incredibly moist over those long, low hours in the oven. Coconut oil handles the searing duty beautifully, building that gorgeous golden crust before the brisket ever hits the liquid. Warm spices like turmeric, ginger, and Ceylon cinnamon weave through every bite alongside fresh thyme and rosemary, giving the whole dish an almost autumnal richness that feels anything but stripped down. After three-plus hours in a covered Dutch oven, the brisket turns fork-tender and practically melts when you slice it against the grain. Spooned with the braising vegetables and that glossy, cider-laced pan sauce, this is genuinely the kind of meal that earns recipe requests before the table is even cleared.

2 sprigs fresh rosemary
2 bay leaves
¼ tsp ground ceylon cinnamon

Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the brisket fat-side down and sear undisturbed for 4–5 minutes, until deep golden brown and releasing easily from the pot. Flip and sear the other side for 3–4 minutes until browned. Transfer the brisket to a plate and set aside.
