Slow-braised brisket is the kind of meal that fills the whole house with an aroma that makes everyone wander into the kitchen asking when dinner will be ready. This version builds deep, layered flavor from unfiltered apple cider, bone broth, and a warm spice rub of turmeric and ginger, with a touch of Ceylon cinnamon and honey rounding out the braising liquid beautifully. Every ingredient here is straightforward and whole — no packaged sauces, no store-bought stocks with mystery additives, and no thickeners or stabilizers that can sneak carrageenan into an otherwise clean dish. The brisket gets a proper sear in coconut oil first, locking in that gorgeous crust before it braises low and slow in the oven until fork-tender and falling apart. Carrots, celery, and onion soften right alongside the meat, soaking up all that cider-and-herb-scented liquid so nothing on the platter goes to waste. A final spoonful of the braising juices over the sliced brisket ties everything together in a way that feels genuinely special without requiring any complicated technique. This is the kind of centerpiece recipe you'll come back to every time you want something deeply satisfying and completely trustworthy.

Preheat the oven to 325°F (165°C). Pat the brisket completely dry with paper towels. In a small bowl, combine the salt, turmeric, and ginger, then rub the mixture evenly over all sides of the brisket.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the brisket fat-side down and sear undisturbed for 4–5 minutes, until deep golden brown and releasing easily from the pot. Flip and sear the other side for 3–4 minutes until browned. Transfer the brisket to a plate and set aside.
