Slow-braised brisket is the kind of meal that makes a whole house smell incredible, and this version delivers deep, savory comfort without a drop of coffee, tea, or any other stimulant sneaking into the pot. The braising liquid is built entirely from unfiltered apple cider, bone broth, apple cider vinegar, and coconut aminos, so every bit of that rich, glossy sauce comes from wholesome, naturally caffeine-free ingredients. Turmeric and ginger in the dry rub give the meat a warm, earthy crust before it ever hits the Dutch oven, while Ceylon cinnamon and fresh herbs like thyme and rosemary layer in subtle sweetness and fragrance as everything braises low and slow. Carrots, celery, and onion soften into the liquid over those three-plus hours in the oven, becoming almost silky and soaking up all that apple-kissed braising juice. The result is fork-tender beef that pulls apart beautifully, served over a pile of those braised vegetables with a generous ladle of sauce on top. It's a showstopper for a weekend dinner or a special occasion, and the fact that it fits a caffeine-free lifestyle requires absolutely zero compromise on flavor or satisfaction.

4 sprigs fresh thyme
2 sprigs fresh rosemary
2 bay leaves
¼ tsp ground ceylon cinnamon
For serving
2 tbsp fresh parsley, roughly chopped (optional)

Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the brisket fat-side down and sear undisturbed for 4–5 minutes, until deep golden brown and releasing easily from the pot. Flip and sear the other side for 3–4 minutes until browned.
