There is something deeply satisfying about a brisket that has been low-and-slow braised until it practically falls apart at the touch of a fork, and this one delivers exactly that. Unfiltered apple cider and bone broth form a braising liquid that is sweet, savory, and faintly tangy all at once, while coconut aminos and a whisper of Ceylon cinnamon add surprising depth without any fuss. A rub of turmeric and ginger gives the meat a gorgeous golden crust after searing, and that fond scraped up from the bottom of the Dutch oven makes the whole sauce sing. The vegetables — onion, carrot, and celery — braise right alongside the beef and soak up every bit of that fragrant liquid, so nothing on the plate feels like an afterthought. Because every ingredient here is straightforward and whole-food based, there is no need to scan labels for hidden nut-derived oils or almond flour thickeners that sometimes sneak into braised meat recipes. The result is a showstopper centerpiece that feels special enough for a holiday table but is genuinely hands-off once it goes into the oven.

Preheat the oven to 325°F (165°C). Pat the brisket completely dry with paper towels. In a small bowl, combine the salt, turmeric, and ginger, then rub the mixture evenly over all sides of the brisket.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the brisket fat-side down and sear undisturbed for 4–5 minutes, until deep golden brown and releasing easily from the pot. Flip and sear the other side for 3–4 minutes until browned. Transfer the brisket to a plate and set aside.
