Beurre blanc is one of those classic French sauces that sounds intimidating but delivers an absolutely stunning result — silky, rich, and bright all at once. This version swings in a beautiful autumnal direction, using unfiltered apple cider and apple cider vinegar to build a reduction that's tangy, slightly sweet, and deeply aromatic with a hint of fresh thyme. The cold butter goes in slowly, cube by cube, creating that signature creamy, opaque texture that clings perfectly to fish, poultry, or roasted vegetables. Every single ingredient here is naturally free of soy, so there's no need to audit labels or swap anything out — just straightforward, clean cooking with real pantry staples. The technique is the whole game: low heat and constant whisking keep the emulsion stable and glossy rather than greasy or broken. A finishing scatter of fresh chives adds a little color and a mild oniony lift that ties everything together beautifully. Once you nail this sauce, it will absolutely become your go-to for turning a simple weeknight protein into something that feels genuinely special.

Combine the apple cider, apple cider vinegar, minced shallot, thyme sprig, and salt in a small saucepan over medium heat. Bring to a simmer and cook until the liquid has reduced to about 2 tablespoons and the shallot is very soft, 8–10 minutes.
Remove the thyme sprig and discard it. Pour the reduction through a fine-mesh strainer into a small bowl, pressing the shallot solids to extract all the liquid, then discard the solids. Return the strained reduction to the saucepan over the lowest heat setting.
